I discovered this brand when I was listening to the podcast about making a new pasta shape, which became cascatelli. I'm in love with this pasta shape, it really accomplished all the things they set out to do-it has a great bite and holds sauce really well. It is a little pricey and takes a little longer to cook, but it's totally worth it! I buy it in bulk so I always have some on hand. The photo with the plate has 2 different types of Sfoglini pastas, one of which is cascatelli.
