Olympia Provisions began as Oregon’s first USDA-certified salumeria. Focused on raising the bar and bettering the world by redefining American Charcuterie, we stay obsessed with quality while focusing on old world traditions and techniques. We hand-craft each product, using fresh, real ingredients. Our salamis are made with live, active molds (none of that fake rice powder stuff). We're determined to revolutionize the meat industry by focusing on small farmers running regenerative pasture programs. Our sourcing model, The Farmers Network, is the foundation of our vision. No smoke and mirrors, just quality American Charcuterie.
