I love these!! I used the carrot currant mix to make muffins and they're delightful. To me, the selling point is that they're actually lightly sweet muffins and not a sugar-bomb cupcake in disguise. Just a heads up, you'll need applesauce, milk (plant milk works too), and another add-in like carrots, zucchini or banana depending on the mix.
