It's consistency is comparable to fage, very thick and creamy. I have used it to make yogurt (mix it with milk only) and the consistency gave me the best result. This tells me there's good quality culture and I'd recommend eating it as-is or use it as starter yogurt to make your own.
Icelandic Provisions has some really tasty yogurt! I have tried most of the regular yogurt flavors and am very excited they also make yogurt with oat milk! I have trouble digesting regular milk, so I prefer alternative milk whenever possible.

I loved the skyr icelandic plain yogurt. It’s nice, thick, and tart. The oatmilk yogurt unfortunately I did not like at all. The taste was really off.
