Rarebird was founded by Jeffrey Dietrich, whose Ph.D. thesis and ventures in bioengineering led him to a concept that transforms the coffee experience. The idea originated in 2020 when Jeffrey delved into the underlying causes of the undesirable side effects associated with traditional coffee, exploring the potential for a superior solution. Jeffrey, like many others, is genetically predisposed to caffeine sensitivity, which magnifies the impact of stress. After experimenting with various coffee alternatives, the idea emerged to redefine the very essence of coffee. Jeffrey's research led him to Px (paraxanthine), caffeine's primary metabolite. Most people haven't heard of it before, but anyone who's had caffeinated coffee has experienced it. That's because paraxanthine is the primary metabolite of caffeine (i.e., when your body breaks down caffeine, paraxanthine is produced). Roughly 80% of the caffeine you consume becomes paraxanthine, though the process can take many hours and have varying side effects. What sets Px apart is its ability to retain caffeine’s stimulatory properties while mitigating many of caffeine’s associated negative side effects (the jittery, wired, or over-caffeinated feeling). The body also metabolizes Px faster than caffeine, so Px is less likely to negatively affect sleep quality. By harnessing the power of Nobel-prize-winning enzyme technology, Rarebird has developed a novel paraxanthine biomanufacturing process, addressing the once costly & challenging production hurdles. The end result: a coffee that only contains paraxanthine - and no caffeine. In February 2023, we proudly launched the world's first coffee infused with Px. Just a few months later, the industry recognized our efforts when Rarebird's Px Coffee received the prestigious "Best New Product" Award at the 2023 Specialty Coffee Association Expo in Portland, OR. We are humbled by the honor and grateful for the recognition. You may be wondering how it works and, more importantly, how it tastes. This coffee showcases a wonderful single-origin Colombian bean where the caffeine is extracted and then the bean is infused with paraxanthine. Brewed like any other coffee, you can expect delicate and approachable tasting notes. The key distinction lies in the way it makes you feel. Px coffee isn’t a caffeinated or decaffeinated coffee. It’s a new kind of brew that elevates your mood, enhances productivity & invigorates your mind.
